Wines by Regabronado

At Regabronado every year we get together and debate what kind of wine to make, which type of grapes to use, and which region and grower we wish to contract for delivery. This is the hardest part as there are so many delicious choices. Once we agree on a single grape or blend we look at the regions in California that have the best crops and we contract delivery.

Once delivered we immediately rinse the grapes and begin the process using our old world crusher. This opens up each grape and gets the juices flowing. We place it in our holding tub and cover. There is some airflow allowed, while keeping pests/flys out as the natural New Jersey yeast begins to dance around. A week to two later, while carefully monitored, its warm to the touch as fermentation takes hold and leaves a beautiful blue purple cap to form.

Then its on to the antique press and put in our seasoned barrels where the wine will mature and pickup new character from the wood. Our reds will age for a minimum of 8 months and up to 10 depending on the grape/blend. We do rack the wine at least once before bottling day to ensure minimal sediment. Our whites are alot quicker as white wine grapes ferment and mature much faster. We believe 4 to 6 months is the sweet spot for our Chardonneys and Sauvignon Blancs.
